Glycemic index of Indian foods

Every value here was measured by feeding the food to people and sampling their blood. That is the only way a glycemic index can exist — which is why this table is short and why the ones with three hundred rows are not real.

The measured values

Every glycemic index value published on this site, with the study that measured it. All values use glucose as the reference food (glucose = 100). Glycemic load is calculated from the available-carbohydrate figure reported by the same study, for the stated example portion.

15 foods. That is a small table on purpose — glycemic index is measured by feeding a food to volunteers and sampling their blood, so it exists only where somebody has run that study. Sites listing a GI for hundreds of Indian dishes are, for most of those dishes, publishing a guess.

Rice, honestly

The most-searched food in this subject, and the one where a single number would be most misleading.

Published glycemic index ranges for rice, from a systematic review of rice characteristics and processing. These are ranges across many studies and many samples, not a value for the rice in your kitchen.

This is why SugarCheck does not print "the GI of rice". Variety, amylose content, whether it was parboiled and how long it was boiled each move the result by more than the difference between the low and high categories. Anyone quoting one number for rice is quoting one study and calling it a fact.

How a glycemic index is produced

Volunteers eat a portion of the test food containing 50 g of available carbohydrate. Their blood glucose is sampled repeatedly over the next two hours, and the area under that curve is compared with the same people's response to 50 g of pure glucose, which scores 100 by definition. The published value is an average across the group, and it carries a standard deviation — several of the Indian values above have one of five points or more.

Nothing about that process can be shortcut. You cannot derive a glycemic index from a food's carbohydrate, fibre or starch content, which is exactly why a composition table cannot produce one and why this site will not print a value it has not found in a study.

Common questions

What is the glycemic index of Indian foods?
It depends entirely on which food, and for most Indian dishes nobody has measured it. This site publishes 15 measured values from peer-reviewed studies, ranging from white chickpea sundal at 24.1 to finger millet stiff porridge at 98.2. Where no study exists, the food page says so rather than printing an estimate.
Why does this site list so few foods?
Because glycemic index cannot be calculated. It is measured by feeding a food to volunteers and sampling their blood over two hours, so a value exists only where somebody has run that study and published it. A site listing a GI for hundreds of Indian dishes has, for most of them, made the number up or copied someone who did.
What is the glycemic index of rice?
There is no single value. A systematic review found published values from 64 to 93 for white polished rice, 39 to 79 for parboiled, 50 to 96 for basmati and 51 to 87 for brown rice, depending on variety, processing and cooking time.
Is low glycemic index food good for diabetes?
Glycemic index is one input among several, and what a person with diabetes or prediabetes should eat is a decision made with a doctor or a registered dietitian who has seen their results. No food treats diabetes, and this site makes no claim that any food does.
