Curd Rice
Carbohydrate per real Indian serving. No glycemic index has been published for this food, and this page will not estimate one.
Reported value — carbohydrate per serving
29.2g carbohydrate
A serving of curd rice — 1 katori curd rice, about 180 g — carries roughly 29.2 g of carbohydrate and 205 kcal, from the Indian Food Composition Tables 2017.
No glycemic index has been published for this food, so there is no needle to put on the dial. Glycemic index is produced by feeding a food to volunteers and sampling their blood; it cannot be derived from a composition table, so this page leaves it blank rather than guessing.
A blank is a finding. It means nobody has run the assay — not that the value is zero, low or high.

Nothing here can diagnose you, and nothing here is a treatment plan. Blood glucose results are interpreted by a doctor alongside your history, your symptoms and a repeat test — a single number on a screen is not a diagnosis. If any reading concerns you, or if you feel unwell, see a doctor rather than a website.
How a glycemic index is assayed
- Volunteers eat a portion of the test food containing exactly 50 g of available carbohydrate — whatever weight of that food that turns out to be.
- Their blood glucose is sampled repeatedly over the following two hours, and the area under that curve is measured.
- The same people are tested against 50 g of pure glucose, which scores 100 by definition. The test food's area is expressed as a percentage of it.
- The published value is the group mean, and it carries a standard deviation — several of the Indian values on this site have one of five points or more.
- Nothing in that sequence can be shortcut. A glycemic index cannot be derived from a composition table, so a food with no study has no glycemic index here.
GI = (area under the food's 2 h glucose curve
/ area under 50 g glucose) x 100
GL = GI x available carbohydrate in the portion (g) / 100

Why there is no glycemic index here
Glycemic index is not a property you can read off a nutrition label. It is produced by giving volunteers a portion of the food containing 50 g of available carbohydrate, sampling their blood repeatedly for two hours, and comparing the result against pure glucose. If nobody has run that study for curd rice, there is no glycemic index for curd rice.
Other sites print one anyway. The values are usually borrowed from a superficially similar food, or simply invented. For a subject where readers are making decisions about diabetes, that is not a small thing — which is why this page carries a blank where a fabricated number would go.

Scope of this record
What this page is not saying
It is not saying curd rice is good or bad for blood sugar, and it is not recommending or discouraging it. No food treats diabetes and no food causes it on its own. Meals are eaten in combination, portions differ, and people differ.
If you have diabetes, prediabetes, or a result that worries you, what belongs on your plate is a conversation with a doctor or a registered dietitian who has seen your reports.
